Rum & banana cupcakes

It is sunday afternoon, I am bored and suddenly I feel the urge to bake something sweet. A quick glance in the cupboards and the fruit basket tells me that I’ve got all ingredients to make cupcakes, I’ve got banana’s and I’ve got rum. Wouldn’t that be a nice combination? You bet it is!

This recipe is enough for 6 big or 9 small cupcakes

Ingredients
125g butter
125g sugar
125g self raising flower
1 banana
2 eggs
1 big splash of rum
1 drop of vanilla essence or vanillin or use a bag of vanilla sugar
1 pinch of ground cinnamon

Pre heat the oven at 200C.
Put the butter, sugar, flower and banana in a bowl. Use your hands to mush it together, then whisk in the other ingredients.
Scoop the mixture into paper cupcake forms and place those in the oven for 15-20 minutes until they become golden brown on top.
Let the cupcakes cool down for at least 15 minutes.
If you want, you can put icing on them but honestly, they don’t need it. They’re perfect the way they are.
